Cornbread has had a bad rap lately, mostly due to its association with blacks and being seen as a black food. Fortunately, here at Radical Dose we are all about reclaiming what others seem ready to abandon. So, today I share with you my recipe for homemade cornbread. You’ll need the following ingredients:

  • 2 cups corn flour
  • 2 cups regular flour
  • 2 cups milk
  • 2 eggs
  • baking powder
  • 1 tablespoon salt
  • 1 cup oil OR 1 tablespoon butter/lard
  • 250 g cheese
  • (optional) sesame

Mix everything in a large bowl until it evens out. Place in a large pre-oiled pan and bake for 45 minutes at 200 degrees celsius. Delicious and fluffy, homemade cornbread is a perfect complement to hearty stews, fancy cheeses or as pictured, the humble scrambled egg.
